Description: Catalysis of the hydrolysis of terminal 1,4-beta-linkages of N-acetyl-D-glucosamine (GlcNAc) polymers of chitin and chitodextrins. Typically, exochitinases progressively cleave off two subunits from the reducing or non-reducing ends of the chitin chain.
